Ever Growing Garden...

During this past week we have spent a lot of time putting in new raised bed gardens (Thanks Mom) and planting our gardens. We always love to try new things and this year we are going to grow Strawberry Popcorn. This variety of corn only grows to approximately four foot and produces two to three ears per stalk. The corn looks like a strawberry in color and shape. The kernels are very tiny. Once the corn is done producing they will have to be harvested and let to sit and dry for one to two months and then it is ready to be popped. Watching different varieties of plants and flowers grow is exciting. I also will be planting tomatillos. I have always thought that tomatillos were a variety of pepper. After doing a little research, I found that it is closely related to the tomato family. In Mexico they are called husk tomatoes. This is due to the fruit being surrounded by a husk type material. We look forward to being able to make fresh salsa verde and pairing it with grilled chicken or grilled fish. I hope that everyone out there is having a great start to a new season and to enjoy the bounty that God provides!
